Puffed Quinoa Apple Crisps

* Reccomendation: Do not use apples like golden delicious or granny smith because they don't come out as sweet. 

- can find puffed quinoa in cereal isle, but you can also opt to use a simple granola (watch for sugar). Or if you're brave, make homemade puffed quinoa. 

Time: 30 min

Servings: 2

2 gala/ golden delicious apples 

2 tbsp cinnamon

1/4 cup raw oats

1/2 cup puffed quinoa

1/4 cup real maple syrup

1 tbsp brown sugar

1/2 lemon

​

1. peel and cut apples into thin slices and mix together with brown sugar and lemon juice.

2. in mixing bowl, add oats, quinoa, maple syrup, and cinnamon.

3. put apples in two ramekins and top each with half of the oat/quinoa mixture.

4. Bake for 20 min or until apples are soft when put through with fork.
