Homemade Blueberry Syrup
Time: 10-20 min
Servings: 4

2 cups fresh or frozen blueberries
3/4 cup water
1/2 tsp vanilla
1/3 cup sugar
1 tbsp corn starch mixed into 2 tbsp water
​
1. Place blueberries into small pot and add water, sugar, and vanilla.
2. Let this simmer on medium until blueberries start to melt and come apart.
3. Add dissolved corn starch and bring to a boil.
4. turn down to low and leave it simmering until blueberries are broken down and there is a medium thickness to the syrup (consistency of regular maple syrup).
5. Top it on pancakes, waffles, oatmeal, muffins, yogurt, and ice cream!
